Italian Meatball Salad

Tonight was a clean the frig night using some things from my Bountiful Basket.

First, turkey meatballs
1 lb. Ground turkey
1/4 c. Chopped onion
1/3G. Tomato sauce
1 egg
Fresh basil
Salt
Pepper
1/2c. Italian bread crumbs
1/2c. Parmesan cheese
Roll on golf ball size and bake at 350 degrees for 30-40 minutes

Now the salad……
One head of butter lettuce, chopped
Chopped yellow pepper
Scallions
Tomatoes

Top the salad with the meatballs-I chopped mine up, top with Parmesan cheese and honey mustard vinaigrette

I make all my dressings – for this one it s a mixture of balsamic vinegar, olive oil, honey, mustard, salt, pep per and garlic cloves.

I think this would also be good with a sun dried tomato vinaigrette

This salad with a cup of roasted cauliflower soup. Yummy!

Easy Yummy Crock Pot Roast

I have been wanting to try this recipe and it is so good.

Place a beef roast in the crock pot

Cover with……
1 package ranch dressing
1 package mushroom gravy
Pepperocini
1 stick butter

I also put potatoes, carrots and onions around the roast.

Cook on slow for 8-10 hours. It will melt in your mouth

Celery Salad

My Bountiful Basket had celery in it so I tried this salad. It is yummy!

2 cups chopped celery
1/4 c. Chopped red onion
2-3Tablespoons capers
1t. Garlic
1/3 c. Chopped pepperoncini
1/2 c. Chopped black olives
1/4 c. Chopped dried sun tomatoes
Salt and pepper to taste
2T red wine vinegar
1-2T. Olive oil
Chopped cilantro

The recipe called for anchovies, but I didn’t have any, but added the tomatoes and cilantro. We really like it!

Creamy Fiesta Chicken

This is a great crock pot recipe!

I had a whole chicken in the crock pot for the day. When I got home I shredded the chicken and placed half back in the crockpot. I added
1 can black beans
1 can corn
1small jar salsa
Then topped with 1 block of cream cheese

Let everything melt together.

I then put in a whole wheat tortilla and topped with salsa and some guacamole

You cold also add cilantro and cheese

So good and easy

Quinoa Fruit Salad

Quinoa is a great source of protein and since I had lots of extra fruit and quinoa I made this salad.

1c. Cooked red quinoa
Assorted fresh fruit- I used pineapple, cantaloupe, strawberries and blueberries, cut in small chunks
3T honey
3T lime juice
1/4 cup dried cranberries
3 T coconut
Combine honey and lime juice and pour over quinoa and fruit. Stir thoroughly and add coconut.
This would also be good with slivered almonds.

Cucumber Cocktail Rye Appetizers

I have had these before but they are fast becoming my favorite. They are quick and easy and I think could just be dinner. But I am thinking my son, Noah, and his friend, Jake, could impress the ladies with these

Cocktail rye bread
Sliced cucumber
Light mayonnaise
Garlic salt
Lemon pepper

Arrange the bread on a cookie sheet and bake at400 degrees for roughly 10 minutes, until hard.
Top with light mayo, spinkle with garlic salt. Top with a slice of cucumber and sprinkle with lemon pepper. Oh, my so good! Thanks Abby Dabby for sharing!

Quinoa Salad w/ Edamame

I tried something similar at Whole Foods and hunted for a recipe that would fit the bill. This is tasty and I will serve it with grilled salmon.
3/4 dry, red quinoa, cooked
1c. Edamame, cooked and cooled
1mango, diced
1/4 c. Diced red onion
1/2 c. Diced red pepper
2T coconut
1/4c. Chopped cilantro
2T. Light balsamic vinaigrette
Juice of 1 lime
2T orange juice
Salt and pepper to taste
Cook quinoa as directed, and cooled. Coos edamame drain and cool. Add mango, red onion, red pepper, cilantro and coconut.
In a small bowl, whisk vinaigrette, lime juice, orange juice, salt and pepper. Add to other mixture. Chill for 30 minutes before serving.

Pasta with Spinach and Mushrooms

A budget friendly recipe that had my husband eating seconds.

1/2 box cooked bow tie pasta
1 pound sliced mushrooms
1 fresh bunch of spinach, washed, dried and chopped
Olive oil
1t. Butter
Garlic
Salt/pepper
Parmesan cheese

Sauté spinach and mushrooms in olive oil and butter. Season with garlic, salt and pepper. Add pasta then top with cheese. It would also be good with peas, pine nuts and chicken!

My hubby and I tried this fresh cucumber salad with spaghetti

I should also tell you that I don’t use exact measurements, a trait I inherited from my 101 year old grandmother.

Sliced cucumber
Olive oil
Lime juice
Salt
Pepper
And my favorite…..Tajin seasoning

Oh so yummy!
